Spring Taste: Pasta with Asparagus and Bonamini Olive Oil

A pasta dish which smell like spring: easy, fast and super tasty!

Asparagus pasta is a quick recipe which required genuine and easy to find ingredients such as, in this case, fresh asparagus, the kind of pasta you prefer, such as spaghetti with asparagus, some white onion, marjoram ot thyme to get this pasta with asparagus recipe some more taste and a nice drizzle of extra virgin olive oil at the end. Few ingredients but high quality ones which once they are mixed together they are going to create such a special culinary experience that only a creamy pasta with aspragus sauce can get you.
A spring veggy like asparagus is an ingredient you can use to make out something just delicious, mouthwatering and with a very specific taste, especially if you decide to give it a new interpretation such us using the asparagus tips, leaving them whole.

Celebrate spring with some Asparagus Pasta 

Spring knocked on our doors and it brought so much, fresh air, flowers but also new seasonal vegetables such as asparagus.
Here at Frantoio Bonamini we like to follow the seasonality and we prefer to use only fresh products paired with our extra virgin olive oil. In fact, in this case, pasta or risotto with asparagus are our lifesavers when it’s time for lunch or dinner and they always make a huge success when brought to the table.

Pasta Asparagi

We’ve decided to not add many more ingredients besides asparagus, which are the mains of this recipe, so we do not risk to overpower their mild taste but we prefered to bring out all their best by pan frying the pasta with a some evo oil.
But if you’d like to make this asparagus pasta recipe richer in taste you can add to the asparagus sauce also some bacon or speck.

Ingredients for 2 people

  • 180gr of pasta of your liking (for us fusilli with asparagus)
  • 250gr of green asparagus
  • 3 tablespoon of San Felice extravirgin olive oil
  • half of a white onion
  • 2 glasses of water
  • spices, salt and pepper

Preparation

  1. Clean the asparagus, thinning them and cut the hardest parts of the steam
  2. Cut the asparagus tips and put them in a bowl with water and ice to keep them green and crunchy

Cooking advice for the best asparagus pasta: if you picked big or frozen asparagus, make sure to boil them for 5-6 minutes before cutting them; if you decided to keep the small ones instead for this asparagus sauce then you’ll just need to cut them in tiny pieces.

  1. In a pan add to the onion, previously blended to make this pasta with asparagus even creamier, 2 tablespoons of San Felice evo oil
  2. Fry for a few minutes on a low flame and after that add the pieces of the asparagus and the spices choosen to make this asparagus sauce more tasty
  3. Add the water and let it boiled, cover with the lid and cook it for around 10 minutes on a medium flame
  4. In the meantime, pick the perfect pasta for this asparagus pasta recipe and make sure to cook it so it’s ready just a few minutes before the asparagus sauce

One more cooking advice: to add extra creaminess to this pasta dish with asparagus we suggest to squash the asparagus with a fork, especially because during the cooking they are going to be much more soft and easy to squash.

  1. When it’s almost ready add to the sauce also the asparagus tips and let them deepening, adding salt and pepper if needed
  2. Drain the pasta still al dente and finish its cooking in the pan with the asparagus sauce
  3. Once it’s all nice and blended out serve the pasta with asparagus still hot, making sure to add that drizzle of raw extravirgin olive oil you decided to pair with this asparagus pasta recipe.
