The butter is replaced with our extra virgin olive oil to create a harmonious balance, without weighing it down, and to enhance its taste and aroma. The use of natural sourdough gives this panettone recipe digestibility and softness, as well as the choice of high-quality natural ingredients, without preservatives and/or natural flavors, such as fresh eggs and soft raisins, makes this Christmas cake an unmissable product on the tables of all Italians on the most beautiful day of the year.

Our panettone with olive oil has a brown surface, given by the perfect cooking, from which pieces of raisins emerge. Inside, the dough of this panettone without butter is honeycomb, soft and richly pearled with raisins. When unwrapped, its vanilla and slightly citrusy scent then gives way to the explosion of flavors that is created in the mouth when tasting the PanettOlio. The presence of raisins immediately conquers thanks to their natural sweetness, the rich and tasty filling creates a balance that can only be framed by the presence of our extra virgin olive oil which, in addition to highlighting the rest of the ingredients, ensures a dough with an enviable melting sensation.
How do we at Frantoio Bonamini recommend enjoying our panettone with extra virgin olive oil?
Whether it’s Christmas Day or simply a day when you need a culinary treat like PanettOlio, we recommend keeping this artisanal panettone at room temperature for at least 12 hours before serving it; this process will ensure that its goodness and natural fragrance are enhanced. Be careful, however, do not heat it near the fireplace or on the radiator because panettone with only olive oil tends to dry out very quickly. Good for any occasion, for breakfast or as a snack with a cup of tea or coffee.
But, following the Bonamini tradition, we serve our panettone with extra virgin olive oil with the classic and timeless mascarpone cream – easy, quick, prepared with four ingredients and satisfies the palates of adults and children.

Born, raised and made famous in Milan, from which we took the original recipe, respecting its processing and ingredients, with the exception of one, which is our strong point: our EVO Oil as a complete replacement for butter. It never tires, light in taste, perfectly balanced.
