The perfect combo able to bring together the sweet of the <strong>pumpkin<\/strong>, one of the most loved seasonal veggies and the versatility of the <strong>chickpeas<\/strong>, legumes with amazing taste and nutritional values.<\/p>\n<p><strong><em>Ingredients for 4\u00a0<\/em><\/strong><\/p>\n<ul>\n<li>600g of <b>pumpkin <\/b>(clean)<\/li>\n<li>300ml of water<\/li>\n<li>200g of precooked chickpeas<\/li>\n<li>1 onione<\/li>\n<li>greated cheese and salt q.s.<\/li>\n<li><strong>Bonamini extravirgin olive oil <a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/san-felice-100-italiano\/\">San Felice<\/a><\/strong><\/li>\n<li><strong><a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/rosmarino\/\">Rosemary infused evo oil\u00a0<\/a><\/strong><\/li>\n<\/ul>\n<p><strong><em>Preparation<\/em><\/strong><\/p>\n<ol>\n<li>Warm up together some <strong><a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/san-felice-100-italiano\/\">San Felice<\/a> olive oil\u00a0<\/strong>and salt in an ample pan and then add the chopped onion, the <a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/rosmarino\/\"><strong>rosemery olive oil<\/strong><\/a> and let it season for 3-4 minutes<\/li>\n<li>Add the cleaned and cutted <strong>squash<\/strong> and let it cook for 5 minutes, making sure to stirr now and then<\/li>\n<li>Add the water till covering everything and let it cook till the <strong>squash<\/strong> is soft, about 20 mins. If it gets too dry, add some water.<\/li>\n<li>Add 3\/4 of <strong>chickpeas <\/strong>to the soft <strong>squash,\u00a0<\/strong>stir and let them cook for 10 minutes more<\/li>\n<li>Blend all together till you get a nice and creamy <strong>squash and chickpeas soup<\/strong><\/li>\n<li>Serve with some greated cheese of your choice, the rest of the chickpeas, a nice drizzle of <strong>extravirgin oil <a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/vert-de-vertes\/\">Vert De Verter<\/a> or <a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/olio-extravergine-d-oliva-santa-giustina-italiano\/\">Santa Giustina<\/a><\/strong>, some pepper and croutons<\/li>\n<\/ol>\n<p><em>Advice and recommendation on this <strong>squash and chickpeas soup<\/strong><\/em><\/p>\n<p>If you want to succeed with this <strong>squash and chickpeas soup recipe\u00a0<\/strong>make sure to pick the correct <strong>squash<\/strong>, fresh and tasty, choosing among the different types the one more suitable for creamy soups. Also <strong>chickpeas<\/strong> make a difference! If we have enough time start with the dried <strong>chickpeas<\/strong> and cook them at home; otherwise you can easily buy those precooked in a can, making sure to rinse them very well.<br \/>\nAs final touch we decided to season our <strong>squash and chickpeas cream<\/strong> with <a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/rosmarino\/\"><strong>rosemary infused olive oil,<\/strong><\/a> but if you like spices you can also use the <strong>evo oil<\/strong> with <strong><a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/olio-aromatizzato-allaglio\/\">garlic<\/a><\/strong>, <strong><a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/peperoncino\/\">chilli<\/a> <\/strong>or even the <a href=\"https:\/\/shop.oliobonamini.com\/en\/product\/tartufo\/\"><strong>truffle infused olive oil.<\/strong><\/a> Green light also for smoked paprika, cinnamon, ginger and nutmeg!<\/p>\n<p>Storage advice: you can prepare this <strong>squash and chickpeas soup<\/strong> ahead of time and keep it in the refrigerator for 2-3 days. Or you can also portion and freeze it, to always have it ready when you are in the mood of this deliciousness.<\/p>\n<h2><strong>Squash and chickpeas soup: the warm feeling of fall and Bonamini olive oil<\/strong><\/h2>\n<p>The <strong>olive oil\/food pairing\u00a0<\/strong>is for us an art, which we&#8217;ve always carried on with very much passion and interest.
