When <strong>olive oil<\/strong> comes into contact with the <strong>pasta cooking water<\/strong>, it insinuates itself between the starch particles floating on the surface and separates them, thus opening passages for the steam and preventing the formation of a lid of compact foam, which would risk causing the boiling water to overflow.<\/p>\n<p>2.
