„CHICKEN SALAD – BONAMINI STYLE“ (to serve 6 people)

1 chicken breast
1 carrot, 1 onion, half celery
herbs: spring of parsley, thyme and bay
gr.80 green and black pitted olives
gr.30 capers
lemon juice
1 tablespoon of mustard
gr.20 roasted pine nuts
2 tablespoon of small pieces of roasted hazelnuts
salt and pepper


Prepare a vegetable broth with 1½ liter of water, use the vegetables and herbs to flavor it, add salt; when it boils add the chicken breast and cook it for 15/20 minutes.
Turn off the fire and leave the meat in the broth for other 20 minutes.
After 20 minutes, take it out and cut into small slices.
Prepare the sauce as dressing: blend together the Bonamini extravirgin olive oil „SAN FELICE“, 4 tablespoons of broth (the same as the you use for the chicken), lemon juice, mustard, salt and pepper.
Serve the chicken with this sauce, cut the olives, capers and put on it the roasted pine nuts and hazelnuts.
Bring this dish on the table drizzling over a little bit of Bonamini extra virgin olive oil „SANTA GIUSTINA“ to add that aromatic note, classic feature of this olive oil.
